  1. Preheat oven to 375F.
  2. Cut zucchini in half, and hollow them out with a spoon.
  3. Chop the zucchini ‘meat’ into small pieces
  4. Use a silicone baking sheet or parchment paper to Line zucchini boats on a pan
  5. Heat olive oil in a non-stick skillet.
  6. Cook onion until golden, about 2-3 minutesz
  7. Add the garlic and cook for a few seconds.
  8. Add in your meat and cook until done (3-5 minutes)
  9. Add the marinara sauce, zucchini pulp, italian seasoning and salt + pepper. Simmer for 8-10 minutes.
  10. Fill zucchini boats with ingredients and sprinkle on cheese.
  11. Bake for 15-20 minutes or until the cheese is nice and melted.
