Spinach & Artichoke Stuffed Chicken Rolls With Broccoli and Cauliflower Rice

    Ingredients
    • 2cloves garlicminced
    • 10oz spinach
    • 1cup artichoke heartchopped
    • 2oz cream cheesesoftened
    • 1/2cup shredded mozzarella cheese
    • 2/3cup grated parmesan cheese
    • saltto taste
    • pepperto taste
    • 4 boneless skinless chicken breasts
    • 1teaspoon salt
    • 1teaspoon pepper
    • 1/2teaspoon onion powder
    • 1/2teaspoon garlic powder
    • 1 1/3cups riced cauliflowerto serve
    • 2cups broccolicooked, to serve
    Instructions
    1. Add olive oil over medium-high heat.
    2. Once oil is hot, add the garlic. Cook for 1/2 minute while continuously stirring.
    3. Stir in spinach and artichoke.
    4. Add parmesan cheese, mozzarella, and cream cheese and stir until well mixed. Remove mixture from heat. Set this aside for now, as you will need it later.
    5. Set the oven to 400°F.
    6. Season the chicken breasts with the seasonings (onion powder, garlic powder, salt and pepper) until generously coated.
    7. Butterfly the chicken breasts by slicing it in the middle from the side, leaving one side in tact for it to open like a hot dog bun.
    8. Pound out the chicken by covering it with plastic wrap (or parchment paper) and use a mallet to flatten it out. You want them to be about 1/4 inch thick.
    9. Add 1/4 of the mixture onto each chicken breast. Make sure not to use too much or you will risk overfilling them.
    10. Roll each chicken breast up. You want it to be a complete circle with the ends overlapping one another. Place these into a dish to go into the oven.
    11. Place them in the oven and let them bake for 20 minutes (or until the chicken is cooked fully – at least 165°F)
    12. Let rest for a few minutes before serving with the cauliflower and broccoli (or other Keto sides that you would like)
