    Whipped Cream Topping
    1. Preheat Oven to 320 degrees.
    1. Use Coconut Oil to grease a square pan. I use silicone wherever possible. You can see the exact pan I used in the ingredient list above.
    2. Add in the cacao powder, collagen, and salt.
    3. Pour in the water, and MCT oil and stir until the mixture is well blended. It should start to form into a solid shape rather than be dry powder.
    4. Press the mixture into the bottom of the pan firmly and bake until firm (15-20 minutes depending on your oven). Remove and let cool while you mix the rest of the recipe
    Cheesecake Layer
    1. Use a hand mixer and mix the cream cheese, protein powder, collagen peptides, and powdered monk fruit together until they look like little popcorn balls.
    2. Blend the heavy cream and MCT oil and blend until it looks like it’s whipped butter.
    3. Pour into the cooled crust and then refrigerate while making the chocolate filling.
    Chocolate Filling
    1. Put your milk, whipping cream, butter and powdered monk fruit in a medium saucepan over medium heat to a simmer just enough so your sweetener is melted.
    2. Whisk the egg yolks and MCT Oil in a separate bowl until smooth.
    3. Pour a bit of the hot liquid into the bowl of eggs and mix. Then pour the mixture back into the rest of the ingredients in the saucepan. Mix in your protein powder, cacao powder and collagen.
    4. Reduce heat to low and sprinkle in the xantham gum while you whisk to mix together.
    5. Cook for another 3-4 minutes. Pour into Cool Crust.
    6. Chill for 2 hours
    Whipped Topping
    1. Beat the cream with sweetener and vanilla extract until stiff peaks form.
    2. Pour over the layer and spread with a spatula.
    3. Sprinkle cocoa powder.
    4. Using a cheese grader, grade the bakers chocolate or sprinkle dark chocolate, sugar-free nibs.
    5. Chill another hour to help set completely.
