Ingredients
  • 3tablespoons olive oil
  • 1cup carrotgrated
  • 1 medium yellow oniondiced
  • 2lb ground beef
  • 1 1/2teaspoons dried oregano
  • 1/2teaspoon red pepper flakes
  • black pepperto taste
  • 4cloves garlicminced
  • 1/2cup dry red wine
  • 28oz crushed tomato1 can
  • 1/2cup fresh basilchopped
  • saltto taste
  • 1 large head savoy cabbageeaves separated and stems trimmed
  • 1 eggbeaten
  • 2cups whole milk ricotta cheese
Instructions
  1. Set the oven 375°F and let preheat.
  2. In a large pan, add the olive oil and warm over medium heat.
  3. Stir in the onion and carrot. Let simmer until slightly soft.
  4. Mix in the beef and add the seasonings (pepper, oregano, red pepper flakes). Break down the beef into small pieces and let brown.
  5. Now, time to add the garlic. Cook for about 2-3 minutes.
  6. Mix in the red wine.
  7. Let the wine reduce about 1/2 way.
  8. Add the crushed tomatoes and mix well. Let cook until you have a thickened sauce. Be sure to stir every now and then while cooking.
  9. Add the basil and mix well.
  10. Remove mixture from heat and set it aside to cool.
  11. Boil water with salt in a large pot.
  12. Add cabbage leaves a few leaves at a time and submerge them in the water (using tongs). Let cook until you have flexible, soft leaves.
  13. Drain the leaves and dry them off by patting them with paper towels.
  14. In the cooled meat sauce, mix in the egg.
  15. In a 9-inch round baking dish, take the largest cabbage leaf and place it on the bottom. Add more leaves as-needed to cover any exposed areas of the pan.
  16. Add about 1/4 of the meat mixture and make sure it is evenly coating the pan.
  17. Add about 1/4 of the ricotta. This can just be dolloped around the pan on the meat mixture.
  18. Add more cabbage leaves and repeat with the meat mixture and ricotta until you have 3 more layers added.
  19. If there are any cabbage leaves hanging over the pan, fold them in so that they are facing toward the pan’s center.
  20. Bake for 1 hour in the oven. It should be slightly browned on top when done.
  21. Remove and let the dish cool off about 20 minutes.
  22. When ready to serve, grab a serving plate and place it over the dish. Flip the dish upside down so the lasagna is sitting on the plate. Carefully remove the pan from the plate, leaving the lasagna behind on the plate and slice into 8 wedges to serve.
