  • 4slices thick cut bacondiced
  • 1tablespoon olive oil
  • 1pound boneless skinless chicken breasts
  • 1/2teaspoon paprikafor seasoning chicken
  • 1/2teaspoon garlic powderfor seasoning chicken

  • 8ounces cream cheeseroom temperature
  • 1/2teaspoon garlic powder
  • 1/2teaspoon onion powder
  • 1/2teaspoon dried dill weed
  • 1/2teaspoon dried chives
  • 1cup chicken broth
  • chopped fresh parsley
  • sliced green scallions
  1. Turn the Instant Pot to sauté mode.
  2. Once hot, add the diced bacon and cook until crispy. Once ready, remove and set aside to cool.
  3. Add olive oil to Instant Pot and let heat up.
  4. In the meantime, use the garlic powder, salt, pepper, and paprika to season the chicken.
  5. Add chicken to the Instant Pot and sear on both sides (1-2 min per side).
  6. While waiting for the chicken, mix cream cheese, dill weed, chives, salt, pepper, garlic powder, and onion powder together until well mixed.
  7. Stop the sauté on the Instant Pot using the cancel button.
  8. Add the mixture of cream cheese to the instant pot.
  9. Add the chicken broth.
  10. Close the Instant pot and set to high pressure for 12 minutes. Once it’s done, do a quick release.
  11. Shred the chicken (it’s recommended to do this in a separate dish or cutting board), then return it back to the Instant Pot.
  12. Cover the Instant Pot with the lid and let sit for 5 minutes. This will allow the sauce to thicken.
  13. Remove the lid and sprinkle the bacon, scallions, and parsley on top of the chicken and serve.
