  1. In a large saucepan, melt the butter over medium heat.
  2. Add the erythritol and 2 cups of heavy cream. Boil, then lower heat and bring to a simmer for 30-45 minutes, stirring intermittently. It will be ready when is has thickened, is reduced to about 1/2, and the back of a spoon can be coated by it.
  3. Pour the mixture into a large bowl. Let cool until room temperature.
  4. Once cooled, add the vanilla extract and vanilla bean seeds (optional) and mix together.
  5. Add MCT oil and whisk it in.
  6. Separately, take the remaining cup of heavy cream and whisk it with a hand mixer on high. This should be about 2-3 minutes until whipped into stiff peaks. You’ll know it’s done when you notice the whisk producing a pronounced trail on the surface of the cream. Another sign is that when you til the bowl, the mixture does not spill out. Be sure not to over-whisk and make it too stiff.
  7. Gradually add the heavy cream into the initial mixture and fold gently. You should only be adding about 1/2 cup each time.
  8. Take the mixture and put it into a freezing dish that you’d want to use to serve the ice cream from. Make sure the surface is smooth. You can also choose to gently add mix-ins at this time and mix them in (also put some on the top).
  9. To prevent ice crystals, take a piece of parchment or wax paper and line the surface.
  10. Freeze and let sit in the freezer for about 5 hours. You will know it is ready once it is firm. About every 30 minutes during this time, gently stir. After about 2 hours have passed, you can stir every hour to hour and a half instead.
  11. Before serving, let it sit for about 10-30 minutes to soften.
