Ingredients
  • 1lb Chicken Breasts
  • 3/4cup red enchilada sauceTrader Joes
  • 1/4cup water
  • 1/4cup onionchopped
  • 4oz diced green chiles
  • 12oz cauliflower ricetrader joes
Optional
  • avocado
  • jalapeno
  • cheese
  • roma tomato
  • Sour Cream
Instructions
  1. Add chicken, enchilada sauce, chiles, onions, water to Instant Pot and cook on Manual for 20min.
  2. Release pressure andshred chicken
  3. Add chicken back into sauce to soak up liquid while you prepare cauliflower
  4. Prepare cauliflower rice per bag instructions and dice preferred toppings
  5. Top rice with chicken, cheese, avocado or preferred toppings
  6. You can also make this chicken on a stove top by adding all of the ingredients to a pot and boiling rather than using the instant pot.
