Fajita Hasselback Chicken

  • 4 chicken breasts
  • 1/2 oniondiced
  • 1/2 yellow bell pepperdiced
  • 1/2 red bell pepperdiced
  • 1/2 green pepperdiced
  • 2tablespoons fajita spice mix
  • 3tablespoons salsa
  • 1/2cup cheddar cheesegrated
  1. Set the oven to 350°F.
  2. Slice the chicken about 3/4 of the way through several times, about 1/4 inch apart. You want the chicken to still be connected at the bottom.
  3. Add onions and peppers over medium heat. When soft, mix in the fajita mix.
  4. Add salsa and stir, followed by the cheese sprinkled over the top.
  5. Melt the cheese by mixing it into the mixture.
  6. Let rest until it is cool to the touch. Add a spoonful of the mixture into each slice of the chicken breast until filled.
  7. Bake for 18-22 minutes. You’ll know it’s done when the juices of the chicken run clear and the chicken is cooked all the way through.
