- 4 chicken breasts
- 1/2 onion diced
- 1/2 yellow bell pepper diced
- 1/2 red bell pepper diced
- 1/2 green pepper diced
- 2 tablespoons fajita spice mix
- 3 tablespoons salsa
- 1/2 cup cheddar cheese grated

Instructions
- Set the oven to 350°F.
- Slice the chicken about 3/4 of the way through several times, about 1/4 inch apart. You want the chicken to still be connected at the bottom.
- Add onions and peppers over medium heat. When soft, mix in the fajita mix.
- Add salsa and stir, followed by the cheese sprinkled over the top.
- Melt the cheese by mixing it into the mixture.
- Let rest until it is cool to the touch. Add a spoonful of the mixture into each slice of the chicken breast until filled.
- Bake for 18-22 minutes. You'll know it's done when the juices of the chicken run clear and the chicken is cooked all the way through.
