One of my Sunday favorites is this Blueberry Muffins Keto Recipe. While I like Monkfruit in this recipe, you can use swerve or your favorite Keto Sweetener. I use Silicone baking cups to pop the muffins out easily and store them easily.

Ingredients
- 1 cup Oh Nuts Blanched Almond Flour
- 1 cup Coconut Flour
- 1/2 cup Lakanto Powdered MonkFruit Sweetener Granular or Confectioners is fine. Or use your favorite keto sweetener
- 1 tsp Baking Powder
- 1 dash Pink Salt
- 1/2 cup coconut oil
- 3 large Eggs
- 1 tsp Vanilla Extract
- 1 cup blueberries

- Preheat Oven to 425
- Line a Muffin pan with 12 silicone cups
- Mix Dry ingredients
- Blend in egg, coconut oil, vanilla
- Fold in blueberries. You can use a blueberry alternative if desired.
- Bake for 15 Minutes
