One of my Sunday favorites is this Blueberry Muffins Keto Recipe. While I like Monkfruit in this recipe, you can use swerve or your favorite Keto Sweetener. I use Silicone baking cups to pop the muffins out easily and store them easily.

Instructions
  1. Preheat Oven to 425
  2. Line a Muffin pan with 12 silicone cups
  3. Mix Dry ingredients
  4. Blend in egg, coconut oil, vanilla
  5. Fold in blueberries. You can use a blueberry alternative if desired.
  6. Bake for 15 Minutes
